Homemade vinaigrette is NOT as difficult to make as it sounds. I have been using this vinaigrette recipe since I started cooking. It's quick, easy and delicious. Give yourself 10 minutes to prepare your salad and vinaigrette. Here's what you need;
Strawberry Vinaigrette
- 2 cloves garlic, minced - chop it as small as you can get it
- 6 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 4 whole strawberries
- 2 tablespoons sugar
- 1 pinch of salt
- 1/2 teaspoon ground pepper
- 1 tablespoon water
Spinach Salad
- 1 clamshell spinach (5 oz)
- 4 button mushrooms, chopped
- 1/4 cup mild cheddar
Step 1 - Puree your strawberries. I just used my knife and minced them into a big pile of mush. Feel free to use a food processor or blender instead. Mix together all the ingredients for the vinaigrette and whisk until the colour is consistent.
Step 2 - Pour vinaigrette into a large salad bowl. Then add spinach. Use your hands to toss the spinach until each leaf is equally dressed. <--click me
Step 3 - Add cheese and mushrooms, and toss the salad once more so that the toppings are dressed and equally distributed through the salad.
