Strawberry Vodka Jam
It sounds like a boozy horrible mess, but trust Bite, we know good jam.
Yield: 4 cups
· 2-3 cups of hulled strawberries, halved
· 1 cup white sugar
· 1 tsp balsamic vineagre
· 2 tsp vodka
Put hulled strawberries and sugar in a pot over medium heat. Stir gently until a decent amount of liquid has cooked out of the strawberries and a syrup is plainly visible. At that point add the balsamic and vodka and continue to boil for another 20-30 minutes. Once the syrup starts to gel and stick to the sides of the pot empty the contents into 1 cup sterilized jars. Seal the jars and boil for 20 minutes in a water bath. Store for up to 3 months unopened.
